I just recently made some for my kids birthday party and got several requests for the recipe which is why I typed it into the computer. Thought those on this list might enjoy it to. Pamela * Lentil Loaf* 1/2 lb. grated chedder cheese (2 cups packed) 2 cups cooked lentils, slightly mashed (3/4 to 1 cup raw, cooked in 1.5 to 2 cups water) 1 small onion, finely chopped (I pre-fry it until soft) 1/2 tsp salt 1/4 tsp ground pepper 1/4 tsp thyme (I use a heaping tsp) 1 cup soft bread crumbs (I used dry breadcrumbs which I bought from Future bakery at the market) 1 egg, beaten 1 Tbsp softened butter (I used salted because that's what I had, you could also probably add a little oil) Mix everything together.
