That sounds great. I'll try this soon. I love lentils. Do you use the quick

cook oats or regular?

Diamond Dog <diamonddog wrote:Just made this up, combining some

different recipes and it was great! So

easy too!

Lentil Loaf

1 c lentils

3 c veg broth

2 c oats

1 c ketchup

2 heaping tbsp nayonaise

1 tbsp worchestershire sauce

2 tbsp soy sauce

1 tbsp minced garlic

1/2 cup sliced almonds

Bring the broth to a boil and add lentils. Simmer 20 minutes. Turn off heat

and stir in oats, 3/4 cup ketchup, nayonaise, worchestershire sauce, soy

sauce, garlic, almonds, and 1/2 cup water. Stir well and place in a greased

loaf pan. Top with remaining ketchup and bake at 350 degrees for 30

minutes. Serve with mashed potatoes, mushroom gravy, and a green vegetable.

Oh! I used regular. And you might want to cook the lentils 30 min. so

they'll be really soft. Just add a smidge more water so they don't boil

dry. Let me know what you think. I loved it!

Hi David:

Thanks my parents live in the suburbs, I am sure we will get into the city

but not sure how much.

Haven't been to Water Tower Place in years and years and years.

When my daughter and I get back from Chicago...

The last time I was in Chicago was years before I

decided to be vegetarian. We, sight seers, went to

the Art Institute (love Impressionist Art) and then

went shopping at Water Tower Place and along the

Magnificent Mile. Chaos! I didn't like how crowded

the streets were with honking buses, cabs and cars, or

the sidewalks, packed with shoving pedestrians!

Hope your experience is more peaceful!

I did a dive bomb on dinner as far as nutrition.: Reese's Peanut butter

cup and Cheeto's cheese things, with diet Mountain dew. 8-X (EEK!) I

was traveling and was at a vendo-land. Ahh well, must do better.

I'm thinking about trying a gazpacho out of the files.

No cooking for me. Way too hot.

I have quite a bit of fruit to use up too, maybe some cottage cheese

and fresh fruit on top.

Everyone have a nice weekend,

She sounds like quite the chef in training! Orange ice cream - sounds

very intriguing.

I just returned from a 3-day " last hurrah " getaway with a friend and our

3 daughters. If I had ONE ounce of energy, I'd be cooking today.

Hope they enjoy that great menu!

We're being lazy and having a Redwoods roast, with mashed potatoes, cabbage and carrots. The roast is big enough for us to have it as easy packed lunches for the next two days.

I think they are very good - glad you enjoy them Fraggle. The only slight drawback for me is there fairly high salt content, as I have to watch my intake. Usually I just make sure I avoid all other sources of salt for that day :-)

I use redwoods things quite often. They are really tasty and make an easy

dinner. The ready to eat sausages and chicken-style pieces are easy to use when

you are feeling ultralazy and also for taking on picnics or when travelling.

Dinner tonight

I steamed some coarsely chunked:

Kohlrabi

2 small potatoes

4 small carrots

1/4 onion

The last couple of minutes I added the sliced kohlrabi greens. I served all this

over whole wheat pasta cooked in vegetable broth with a dressing of balsamic

vinegar, lemon juice, minced garlic and ginger.

This was just a thrown together dinner at the last minute, but it was really

good. My carnivore husband even went back for seconds.

How do you make it into a patty? Do you grate it raw or cooked? Add anything?

The lentil loaf sounds delicious!

You're brave -- I won't try a new recipe for company, b/c they usually turn

out wrong and that makes me way too nervous! I tried a new recipe the other

night when I had a friend (and her dog) over for supper -- not really

" company " :) It was just very bland, we had to doctor it up quite a bit. I

felt really bad, told her next time I had her over I would make something I

knew was good! :)
