Guest guest Posted January 25, 2006 Report Share Posted January 25, 2006 last night's dinner - I keep thinking of things i haven't made in a while.. once I make them I realize I forgot how good they are. This one has a very light feeling to it - leftovers for lunch today! I buy a flatbread and use it as my pizza crust, some of you may make your own or buy pizza crusts, but the flatbread tastes better in my opinion mix 2 heaping tablespoons of ricotta cheese with 2 heaping taplespoons of sour cream (or mediteranian yogurt) - use more of both if you want. Add oregano, basil, thyme, chilis, garlic, salt and pepper. brush a small amount of olive oil on the pizza, and spread the ricotta /soure creme over it as you would with sauce thinly slice a zuchini (in circles) and cover the pizza with it. Cover it completely , with just small spaces in betewwn the slices. Chop a small amount of green/ red pepper, onion, and olives and throw them over - mainly filling up the cracks in the zuchini. Slice a tomato and completely cover the pizza (except for small spots...) add dried oregano and basil over the tomato. Bake at 350 for about 20 minutes, broil for 1 or 2 minutes and take out of the oven. When you slice it, there may be excess liquid from the tomato, just pat it off - what i do is cut it on 1 plate and then put the pizza on another, leaving the liquid behind.
