Lentil Crunchies review plus a recipe

I made the Lentil Crunchies this afternoon .. .. and then again after supper.

The girls ate most of the first batch for an afterschool snack :) The only

change on the second batch was I doubled the spices at a unanymous request.

Thanks again for posting the recipe.

 

As I mentioned I have just recently started cooking for a vegetarian. My 12

year old made a choice to eat vegetarian about 2 months ago. I have been

searching for recipes and working to provide foods that give her the nutrition

she needs. I play with recipes to try to provide tasty meals for her while

making meat meals for everyone else. I created the recipe below by combining

two other recipes. It came out well so I thought I would share it with the list.

Everyone liked it - even my youngest who I have to fight vegetables into at

every meal LOL

 

If you try it, I hope you like it.

Creamy Stir-Fry

 

3 cups cut-up vegetables (broccoli, carrots, etc)

vegetable cooking spray

1 can Cream of Celery Soup

1/2 cup milk

1 tbsp. low-sodium soy sauce

1/4 tsp. garlic powder

4 cups hot cooked rice, cooked without salt

 

Spray skillet with vegetable cooking spray and heat 1 min. Add chicken

vegetables and stir-fry until tender-crisp.

Mix soup, milk, soy and garlic powder, pour over vegetables and heat through.

Serve over rice.

 

*NOTE: I think a bit more milk next time - sauce was a bit thick.

Tiina,

I noticed your email address (can craft), are you a *crafter* ? I

made some awsome wind chimes with cans once and other great craft

items from recycled cans.
