On occasion I buy organic butter if I must have it for company/recipe. I have not had good luck with margarine type spreads . Guest guest Posted February 11, 2006 Report Share Posted February 11, 2006 when necessary I use Smart Balance Light with Flax seed oil. I prefer butter though but hate that it's not as easily spread. To make it spreadable I mix 1 C butter with 1 C olive oil and whiz it around the blender. That said, I battle with myself animal vs fake...the smart balance has no trans-fat so it's better than the other fakes out there. For right now, though, I'm going with the real thing over the fake until there is a fake I feel better about giving my kids. Guest guest Posted February 12, 2006 Report Share Posted February 12, 2006 -Meg, I don't feel too bad about using *organic butter* knowing that the cows are at least treated humanely, (Hopefully). I have been to an Amish farm that sells their milk to Land of Lakes and it was such a peaceful, beautiful place. I observed the milking process and watched as some calves even entered the barn with their mothers. The rest stayed out in the pen and were not putting up a fuss so that was encouraging. I didn't get the opportunity to visit the chicken yard but good to know that they were free range . I have used Smart Balance but hate to cook with it. Butter just seems safer and nothing can compare with the taste. I agree with you about the choice to feed butter to your children. It was voted Best Tasting by the American Culinary Institute. I don't believe its organic, but it IS vegan and more widely available. So a while back in despair we bought butter. Well the cat still likes a little dab to help against hairballs, but we don't like it or use it at all. How could we? - It doesn't taste even a little bit as good as Earth Balance! So now we do without, use nut butter or tahini (very rarely) or for sandwiches of course we use a vegan mayonnaise. For cooking? Pretty well low-fat, but olive oil is the one of choice. That carrot-butter spread that has been posted here is lovely btw. Dairy? I use butter in some recipes, like my mac and cheese, but I have cut my butter consumption to about 1/8 from what I used to eat. We were poor so those dairy products were wonderful additions to our meager diet. It was difficutl to give up this comfort food. Easy to give up meat, but after reading about the treatment of milk cows it became easy for me to give up dairy. However butter (organic) has been harder to replace. I have tried Earth Balance and Smart Balance and do not care for the taste even though I am sure it is so much healthier. Can't really compete but I was brough up in England during WWII and all that stuff was rationed like north Americans can't even imagine. So when it was all over and we could get eggs and dairy again, of course our parents overdid it and gave the kids lots and lots. Cheese was the hardest for me to give up after becoming vegetarian. Still have to remind myself to ask for pizza without cheese ;-) No, I was meaning that one gets used to things more easily than I would have thought - well, I do, anyway. Now I don't like the taste of butter, for eg., or the greasiness of cheese. What a sadness! So now even when I decide to be 'naughty' and eat dairy anyway it's not something I like as well as the subs. And of course I was also meaning that cow/sheep/goat dairy products are an acquired taste anyway . . . As for the poor animals, that's a huge disincentive to consuming the stuff for me. But I ain't perfect, not by a long chalk!!! (And is that an understatement or what - not to mention declaring the obvious!) Having said that, I fluctuate between organic butter, and using Willow Run soy margarine (by Shedd) when I can find it. But I HAVE to use eggs (organic) for teacakes; nothing else will work right.
