Guest guest Posted February 16, 2006 Report Share Posted February 16, 2006 I ended up making this with my reddish-orange lentils and glad I did. It is a keeper of a recipe. Here it is. The soup will not be red when cooked, turn a nice yellow color. Red Velvet Lentil Soup 2 cups red lentils 2 onions, chopped 6 cups water (I used broth) 2-3 bouillon cubes (I didn't use since I used broth) 1 Tbl. black peppercorns 1 Tbl. olive oil salt to taste Saute the onions in oil in the soup pot. When onions are done, add the water an bouillon cubes (or broth instead), peppercorns, and lentils. Cover and broing to a boil, turn to simmer and cook until lentils are soft. Seems it was about 30 minutes. Season with salt to taste. Blend soup in blender or food processor until smooth. I used a hand held blender instead and it worked fine. Reheat and serve. Autos.
