Purple Cabbage Salad 1 head of purple cabbage, shredded 1 cup of pecans, cut in half 3 green onions, chopped and include tops Dressing 1/2 cup vinegar 1/2 cup sugar (I use raw sugar) 1/4 cup canola oil 1/4 cup lite low sodium soy sauce Mix dressing until sugar is dissolved. I shake in a jar to blend. Toss dressing with cabbage and pecans and enjoy. This is a favorite quick weekend lunch. Injustice anywhere is a threat to justice everywhere. I took out a purple cabbage last night to do SOMETHING with and just didn't know what I wanted to do with it. I ended up putting it back in the refrig because I was blank. I'll try this salad with pecans, perfect! At first I thought that I could just steam the purple cabbage like I do the green cabbage but cookbooks indicated that it needed to cook for an hour or more?
