Guest guest Posted February 17, 2006 Report Share Posted February 17, 2006 Hello all. Things have been really busy and hectic for me lately and I haven't had any time for this group at all. I'm pretty behind on the posts and just scan on the site for recipes that might work to freeze. Last week my boss told us that she had accepted another job, although she gave " two weeks notice " the company asked her for Feb 10 to be her last day. So, with me about to go on maternity leave, things have been pretty busy as I really need to make sure that everything is in line and up to date. Before I wasn't worried because I knew Deb could do it if I didn't get it done, but now there is no one else. YIKES! I've just got everything crossed off my to-do list at work and now maybe I'll have some energy to work on my home to-do list. We haven't got as many meals in the freezer as we'd like, so I'm hoping to do some cooking over the weekend. I'd like to make some lentil loaves and some mini shepherd pies. James has already made enchiladas. Any other ideas for good freezer food? To tell the truth I haven't been in a cooking mood at all and James has been taking care of me. I've just been so pooped after work that it's not until 9pm that I'm getting any energy, so then I just empty or load the dishwasher. Oh, boy, am I READY to have this baby! I think various pasta sauces and thick pea or lentil soups are good for the freezer. Have you looked in the casserole folder, I'll bet there are some in there that would freeze well. I'm glad you got the work stuff done, and hope you get a nice surge of energy to finish all you'd like to before Juniper shows up... I'll be praying for you!
