It's getting colder here and we are expecting lots of snow tomorrow which is fairly unusual here in the south of Scotland. I feel so inspired by this recipe though that I'm going have to make avocado boats and then turn on my halogen heater and pretend it's the sunshine. It's going to be a sandals and tshirt day so I am fixing avacodos boats for lunch. Avocado Boats 2 avocados sliced into halves(don't forget to thoroughy wash outside skin before cutting). Remove seed and carefully scoop out the insides leaving the shell intact. I like to leave the avocado a little lumpy..Mash if you like Mix avacodo with 2 green onion bulbs diced (save tops for garnish) 1 small cucumber diced 2 radishes diced 1 small ripe tomato diced 1/2 cup sprouts(any kind) 2 tablespoons tamari(or to taste) 1/4 teaspoon sea salt(or to taste ) 1/8 teaspoon garlic powder Mix all ingregients well and fill empty avocado shells. Garnish with chopped green onion tops.. PS..I will add a dollop of dilly sour cream to the top of mine and a few thin slices of soy cheese What a wonderous fruit I do declare The bumpy Aligator Pear Deanna Wash thoroughly.
