I highly recommend this cookbook. Zha Mi Fen (Crispy Rice Noodles) 12 (ounces)pkg. rice stick noodles 1 green onion, chopped (I use 3) 1 tsp. finely chopped garlic (I use 3 cloves) 1 tsp. finely chopped ginger 1 cup sliced muchrooms (I use porti's) 1/2 cup cashew nuts 1 cup bean sprouts 1 Tbl. soy sauce ( I use low sodium) 1 tsp. salt pinch freshly gr. pepper 1 tsp. cornstarch dissolved in 2 Tbls. broth Heat oil in wok or deep frying pan until very hot. Have a large draining ladle or sieve ready. Put the rice noodles into hot oil. They will puff up and cook immediately so remove with the ladle before they overcook. Drain and keep warm. (I put them on a baking sheet in the oven on very low). In another pan put 2 Tbls. oil and stir fry green onion, garlic and ginger for 30 seconds. Add the mushrooms, nuts and bean sprouts and stir fry for 1 minute. Add the soy sauce, salt, pepper and cornstach mixture. Cook until sauce thickens but be careful not to overcook the bean sprouts. Arrange noodles like a nest on a serving dish. Pour the mushroom and cashew nut sauce into center of the nest. Serve hot. Note - I usually add a pinch of red pepper flakes, one stalk of chopped celery and a few snow peas. I also sprinkle toasted black sesame seeds over top of dish. When you open the rice noodles don't try to separate the noodles, it won't work. You will be sweeping those things off the floor for weeks.......can you tell I've tried it before?
