Chayote Soup - Sopa de Chayote 2 large chayotes, peeled, seeded and chopped 6 cups vegetable broth 2 tbls. butter or oil 1 onion, finely chopped 3 garlic cloves, minced 1 tbl. flour 1/2 tsp. crushed red pepper flakes 1 sm. jalapeno, minced chopped cilantro for garnish chopped avocado for garnish crushed tortilla chips for garnish Boil chayotes in 3 cups of broth until tender, about 20 minutes. Transfer to blender or food processor and blend until pureed smooth. Meanwhile heat butter in saucepan over med. heat and saute onion, garlic, jalapeno and red pepper flakes for 7 minutes. Stir in the flour and cook another 2 mins. Place pureed chayote back into saucepan with the sauteed onion mixture and add the other 3 cups of broth, bring to a low boil and stir until soup thickens.
