Make macaroons, eat it just as it is. I love coconut!

If you like you can make the tropicak bread I posted

and toss some into the batter.

it is unsweetened and a bit dry. I bought it to just eat as a snack .

Wondering if I can re-hydrate it with some kind of liquid.

If it's unsweetened - add it to curry sauce (oh wait, did you say you

didn't like curry?). Poach with some broth, vinegar, chili peppers

and use to marinate tempeh... Cook with rice, and top with some spicy

veggies. Excellent combined with tamarind. Puree with fruit and dry

for an energy bar.
