Linda - ~ PT ~ Thursday, March 02, 2006 10:34 AM [recipe] Penne Pasta with Spring Greens and Feta Cheese This is what my daughter is making for dinner tonight along with garlic bread and salad. She already tested the recipe in her ccultural cooking class at school and swears this is wonderful; looks great to me and the best part is i don't have to cook tonight. From the looks of the recipe there is a lot of room to change out or add ingredients to suit your palate. You could sub a type of nut for the seeds, or a use a different type of greens in place of the spinach. You could make it easily vegan by using some crumbled seasoned tofu in place of the cheese. Enjoy!
