She is vegetarian and her husband is Turkish so I'm betting she has some fabulous recipes. Another cousin had mentioned to her that I was interested in her beetroot and couscous recipe, so here it is. I tried it for my dinner tonight and it was great - the cooking apple really gives it zing. I've now definitely got the taste for beetroot and will have to buy some more tomorrow to make Amy's beetroot rosti. Beetoot and apple couscous 300g grated cooked beetroot 1-2 large cooking apples, grated 250g (raw weight) couscous, cooked in the usual way. Dressed with: pinch of salt, pinch of pepper and 1 tbsp sugar dissolved in about 3tbsp red wine vinegar, 250g natural yoghurt and about 3tbsp olive oil. I didn't bother cooking my beetroot - I was in too much of a hurry and it tasted just fine. This combination makes the couscous a jewel- like colour - unfortunately it has also dyed my fingers the same shade so perhaps latex gloves might have been a good idea....
