I have some Thai Stir-fry Rice noodles, which are somewhere between white and see-through and are about the size of angel hair pasta. Having opened the packet there are 3 rectangular groups of noodles, much like there would be in a packet of egg thread noodles. I guess the name rice stick noodles had me expecting something a bit bigger - these are very fine, like hairs. The only thing I can do is try them. Do you know I have had that Chinese Vegetarian Cookery book by Jack Santa Maria since the early 1980s and I don't believe I've ever cooked anything from it. After your recommendation I shall have to try a few recipes. I also have his Indian Vegetarian Cookery book which also has some interesting recipes. Guest guest Posted March 6, 2006 Report Share Posted March 6, 2006 Christie his Chinese cookbook is a good one. OK take those noodles and drop in boiling water for about 3 mins. Take the cooking scissors and cut thru them some so they will be in a shorter noodle. Drain and let them sit, they won't become starchy and pasty like pasta noodles and will hold their shape. Now chop up your stir fry veggies and have some broth on hand. Put the noodles right into the hot pan with your veggies, spices and stir fry, add broth as you stir fry so they don't stick. You will have a nice dish when you are done. Let me know what you think of the noodles. Guest guest Posted March 6, 2006 Report Share Posted March 6, 2006 i usually get rice vermicelli, it's very much the same as the rice noodle sticks but thicker noodles, about the consistency of a thin spaghetti, not quite angel hair.
