Hope you enjoy these, Fiona Brown Rice and Tofu Baked Patties 1 c Tofu; mashed 1 c Brown rice; cooked 1/2 c Celery; minced 1/4 of Small onion, finely chopped 2 Garlic cloves; minced 1 tb Nutritional yeast 1 tb Peanut butter 2 tb Soy or tamari sauce 1/2 ts Sesame oil 1/2 ts Sage 4 tb Whole wheat pastry flour Place all ingredients, except for the flour, in a medium-sized bowl and mix well. Using your hands, shape the mixture into 6 patties. Press firmly so that the patties hold together well. Dredge both sides of each patty in the flour and place them on a well-oiled cookie sheet. Bake the patties at 400 F. for 25-30 minutes, or until they are golden brown. Turn the patties over halfway through the baking. The mixture was so soft I couldn't get it to form into patties, then when I finally did I put it in the flour to dredge and couldn't get it out in one piece. What did I do wrong? I finally decided to skip the dredge part and put the flour straight into the mixture and it helped firm it up enough to shape into patties. They're in the oven now and I'm dreading the " turn patties " step! Ack! They smell WONDERFUL though! OH MY GOSH!.. if the raw tofu/rice mixture that I licked off my fingers is indicative of the finished product... boy oh boy, these are yummy... I just flipped them, and can't wait to eat!!! by the way... my daughter said " i wish I had your hands... so she could lick MORE off..lol...
