Donna,

Today I wrapped my baked tofu in my somewhat limp lettuce leaves and it

was very tasty. I had forgotten that I liked lettuce wraps until you

reminded me. LOL

What a good idea. What else would you eat in a wrap like this? Do we

have any recipes on file?

Christie, use any hummus recipe in a lettuce wrap,

also there are a lot of recipes in the sandwich foler

that will give you a good idea. If you crumble up

firm tofu and bake it with seasonings it will take on

a chewy texture and tastes good in a wrap.

On reflection the baked tofu might be a bit " meaty " for me, but

perhaps greek salad with yoghurt wrapped in lettuce, would be a good

low-cal lunch. Or tabouleh with roasted veg and hummus. Or grilled

halloumi. Can't wait to try. Thanks Donna
