Okra and Potatoes (I know only a few people like okra but this is so good)

Even if you can't stand okra this is worth a try you

might like it. I know Susie will like this one, she's

my okra buddy. It really is delicious.

 

Okra and Potatoes

 

1 lb. fresh okra

1 large onion

1 med to large potato peeled

1 jalapeno,minced (I use 1/2 cuz I'm chicken)

1/2 tsp. salt

1/2 tsp. turmeric

6 Tbls. canola or olive oil

 

Wash okra and remove stems, cut lengthwise into 4

rounds per pod, then dry on paper towels.

Slice onion thinly into thin rounds and separate.

Cut potato into cubes, about 1/2-inch thick.

In a large skillet heat oil on medium. Add onions and

potatoes and stir until lightly browned.

Add salt, turmeric, okra and hot pepper. Cook

uncovered until done,stir occasionally until done,

about 20 minutes,

thanks for posting this, donna. i will have to try

it.

 

i love okra. my family always grew it in our garden

and in the summers we would have okra every single day

(sometimes twice a day). i wish we had acess to all

these amazing recipes back then!

Will this work with frozen okra? I will be months before there is

fresh okra in my part of the globe.

mmmmmmmmmmmm, i love okra, too! this one sounds easy and do-able.
