It really is delicious. Okra and Potatoes 1 lb. fresh okra 1 large onion 1 med to large potato peeled 1 jalapeno,minced (I use 1/2 cuz I'm chicken) 1/2 tsp. salt 1/2 tsp. turmeric 6 Tbls. canola or olive oil Wash okra and remove stems, cut lengthwise into 4 rounds per pod, then dry on paper towels. Slice onion thinly into thin rounds and separate. Cut potato into cubes, about 1/2-inch thick. In a large skillet heat oil on medium. Add onions and potatoes and stir until lightly browned. Add salt, turmeric, okra and hot pepper.
