This is made using masa harina, it's kind of a corn pudding cake with spicy flavors. Serve warm or room temperature. Mexican Corn Cake Pudding 1/4 cup butter or margarine 2 tbls. vegetable shortening 1/2 cup masa harina 5 to 6 tbls. cold water 10 oz. frozen corn thawed or canned corn, drained 3 tbls. corn meal 1/4 cup sugar (little less is fine) 3 tbls. cream or a thick rich brand of soy milk 1/4 tsp. baking powder 1/4 tsp. salt dash of cumin 1 to 2 tbls. chopped mild canned green chiles Preheat oven to 350F. Grease an 8X10-inch or a 9X9-inch square baking pan. Beat butter and shortening in a mixing bowl until well blended and creamy. Beat in masa harina until mixed. Add water as you beat until dough resembles a cookie dough mix. Blend in corn kernels. In a separate bowl mix together cornmeal, sugar, cream, baking powder, salt, cumin and green chiles. Add masa harina mixture and blend well. Pour mixture into prepared pan. Cover pan with foil and bake for 40 to 50 minutes until the mixture is the consistency of a custard. I love this group - you just mention an ingredient and someone comes up with a recipe straight away. I shall head off to the supermarket in the morning to get a jar of chillies - would green jalapenos do? The only ones they stock here are green or red jalapenos but I have no idea how hot they are.
