Guest guest Posted March 14, 2006 Report Share Posted March 14, 2006 Vegetable Curry 1/2 cup olive oil or ghee 2-3 onions, chopped 2 " piece of ginger, minced 10 clove garlic, minced 1-2 tbsp. turmeric 1/2 tsp. fennugreek (ground.) 1 tbsp. brown mustard seeds 2 tsp. cumin seeds 1 tsp. coriander powder 1 tsp. ajwan seeds 1 tsp. black pepper 1 tsp. red chili flakes 2 cup vegetable stock 2 cups carrots, thickly sliced 2 cups cubed, cauliflower 2 cups chopped broccoli salt and pepper to taste I usually use a big wok or cast iron dutch oven. Heat oil and add mustard seeds. They should pop. Take them out or cook mustard seeds in small skillet. Add ginger , then onions and saute with rest of spices. Onions should be clear and limp. Add water (you may need more) and veggies. Saute until veggies are soft all the way through. Some people steam the veggies a little first. There should be a little liquid in the " gravy " .
