Guest guest Posted March 22, 2006 Report Share Posted March 22, 2006 Curried Egg Salad Sandwiches 1/2 cup mayonnaise 1/2 tsp. honey 1/2 tsp. ground curry Dash ground ginger 6 hard cooked eggs, coarsely chopped 3 green onions, thinly sliced 6 slices whole wheat bread Sliced tomato, optional In a bowl, blend mayonnaise, honey, curry and ginger. To keep the cholesterol down I'll use the egg whites and vegan mayo. Thanks for this recipe. The experts have now changed their minds...I'm on a low cholesterol, low fat, low salt, diabetic diet....I'm now allowed 1 egg per day. Isn't that marvelous? Not too many years ago the doctors wouldn't let me have any eggs at all. And I don't tolerate tofu very well, or any other soy product for that matter. I just isn't compatible with my system.
