Fruity Brown Rice 1 cup fat-free milk (soy milk works) 2 cups quick cooking (instant) brown rice 1/2 tsp. table salt 1 large banana, sliced 1 cup blueberries, stems removed 2 small peaches, sliced 4 tsps. honey In a medium saucepan, bring milk and 1 1/2 cups water to boil. Add rice and salt. Reduce heat and simmer, covered, until all liquid is absorbed, about 12 minutes. When rice is done, stir in banana, blueberries and peaches. It's a matter of things containing protein for me. For some, this would disqualify me as vegan and would simply put me in the category of " strict vegetarian. I personally love diversity. Don't tell anyone (hee hee) but I still use butter and I consider myself a Vegetarian. I say that I am a *wanna be Vegan* but still use some of my perfectly good leather hand bags and shoes. I won't buy new but will use those until worn out. I have found that having a Vegetarian-Vegan mind-set I am more tolerant of just about everything and everybody. There seems to be a higher power here and most likely things are going as planned.
