Guest guest Posted March 26, 2006 Report Share Posted March 26, 2006 Espresso Poached Pears 6 cups strong coffee 3/4 cup sugar 1 cinnamon stick 3 cloves 4 Beurre Bosc pears, peeled, stalks intact 1/4 cup sugar, extra Place the coffee, sugar, cinnamon and cloves in a saucepan over medium-low heat, stirring until sugar is dissolved. Add the pears and simmer for 20 minutes, turning pears occasionally until they are tender. Remove from the heat, remove the lid and allow to cool in the pan. Remove pears from coffee syrup. Place 1 cup of coffee syrup in a small saucepan over medium heat. Add the extra sugar and stir until sugar is dissolved. Boil for 6 to 8 minutes or until reduced by half and set aside to cool.
