Guest guest Posted March 27, 2006 Report Share Posted March 27, 2006 This bread is made with applesauce in place of the oil. Nice and moist and it works with either of the two tropical fruit. I make it often. I tried it with canned peaches and that was also very good. Mango or Papaya Bread 1 cup applesauce 3 large eggs or 6 egg whites 1 tbl. vanilla 2 cups white sugar (I use organic raw, bread won't turn out real sweet) 2 cups papaya or mango, pureed in blender 1/4 tsp. baking powder 2 tsps. baking soda 1/4 tsp. salt 1 tbl. cinnamon 2 1/2 cups unbleached all purpose flour 1 cup chopped walnuts (I toss in 1/4 cup ground flax seed in mine) Preheat oven to 350 degrees, grease and flour two 8-inch loaf pans. Beat eggs, applesauce and vanilla in large bowl. Add sugar and beat until well blended. Blend in mango or papaya puree (I leave teeny chunks in mine) In a small bowl mix dry ingredients until well blended. Add flour mixture to the wet mixture and beat slowly until just blended (I do this part by hand). Fold in nuts and pour into prepared pans. Bake for 45 - 60 minutes until toothpick inserted comes out clean. Cool in pans on wire rack for up to 10 minuyes. Run a table knife along the pan edges and remove from pans and finish cooling on wire rack.
