1 medium onion, shredded

2 beaten eggs

1/4 cup all purpose flour

1 tsp. salt

2 TB olive oil

2 medium zucchini, thinly sliced

1 medium yellow sweet bell pepper, chopped

1 small red onion, halved and thinly sliced

2 cloves garlic, minced

1 pkg. (5.3 oz.) soft chevre (goat cheese)

16  cherry tomatoes, quartered

2 TB fresh basil, chopped

1 cup (4 oz.) shredded mozzarella cheese

Fresh basil sprigs, optional

In a large bowl combine the zucchini, yellow squash, yellow pepper, onion,

and garlic.

In a large skillet heat the remaining oil; cook the vegetable mixture, 2 cups

crisp tender, stirring often.

Spread goat cheese over potato crust; top with cooked vegetables and

tomatoes. Sprinkle with basil and

mozzarella.

Bake in a 425º F., oven for 5 to 7 minutes more or until cheese is melted. If

This is a really great idea! I imagine it would be great as a breakfast pizza

with scrambled eggs, too.

HI Joanie!

I'd like to recommend a great group for support/ information and most

importantly RECIPES that are gluten free! There are tons in the

files there, and people who have been there , done that in regards

to celiac disease.

vegan-and-Gluten-Free

best of luck,

Jenni
