Yummm! Subway's veggie sandwich is my favorite. I could eat it every day.

I fix oatmeal with raisins or dried cranberries for breakfast. Sometimes I

top the oatmeal off with a fruit flavored yogurt garnish.

I make oatmeal in my little blue enamel pan and have toast with

peanut butter on it. I used to eat donuts and stuff like that until

I became a vegetarian and joined this group and learned how to cook

and what to eat that was healthy. I don't eat fast food but sometimes

I get a Subway vegi delight, I think that's what it's called.

My breakfasts rarely vary....spring & summer it's Kashi Good Friends, vanilla

soy milk, strawberries and 2 T of ground flax with a few walnuts tossed in. In

fall and winter it's oatmeal (real, never that instant stuff...shudder) with a

handful of raisins and walnuts or pecans added.

 

I'm always amazed at some of the stuff that people eat and think nothing of it.

And they have the nerve to laugh at my diet. Little do they know that I will

have the last laugh. :-)

I am a pig a breakfast not everyday but most days, I have 6 cups of my homemade

cereal, it has dried fruit in it, but a slice a banana on top, a glass orange

juice, 2 egg substitute omelet with mushrooms and onions I change the veggies, 2

pieces of toast and a tea.

Thats what I had today lol

Breakfast is my least favorite meal. I will warm a flour tortilla and spread

crunchy peanut butter and sliced banana on it and roll up. I might make steel

cut chewy oatmeal with cardamom and brown sugar on top. If I have time I will

make a slice of wheat toast and top with Veganaise mayo, soy cheese and

lingonberry jam, I know what a freak huh? LOL

that is kinda funky, but to each his/her own! I usually have leftovers or

(don't hurt me) I throw a frozen dinner in the microwave for brunch. I usually

am drinking water at the gym instead of having a proper breakfast. stouffers

mac & cheese is the best (yummiest) stuff on the planet & YES I do know how bad

it is! there. i said it. let the bashing begin. ;)

I don't know about that mix........~lol~ but I have been known to eat

cold pizza or I make a healthy smoothie or grab a grapefruit and have

toast.

Breakfast??

I normally am up and about by 4:30 AM and I eat " leftovers " ..This

morning I had Polenta, a mixed green salad, and green tea. Snack time

now and I'm eating celery with soy cheese. I will eat a *big meal*

around 2 PM and then I don't normally eat after 4 PM. I drink at

least 8 cups of purified water a day and juices. I have a snack of

fresh fruit usually around 6 PM. Normal day for me.

I go the smoothie route: 1 C homemade oat milk, 1 banana,

1/2 bag frozen blueberries, 1/2 bag frozen strawberries

or raspberries, 1/2 C plain nonfat homemade yogurt, 3 Tb

rice protein powder.

During the week, it's coffee and either a banana or a breakfast bar.

Weekends usually end up: one day some nice cereal (Bear Naked, Kashi,

etc) and the other day scrambled eggs with green onions, soy sausage

and a bit of cheese on top. Pancakes if we're feeling motivated in

the am!

I usually have oatmeal (steel cut, usually cooked a day or two before

- I make enough for a few days) with vanilla unsweetened protein

powder stirred in, topped with whatever fruit salad I've made this

week, and topped with unsweetened soymilk. If I remember, I try to

add ground flax seed.

FOr not liking breakfast, those items sound pretty good! Especially

the lingonberries... I LOVE lingonberries....

Beth, when I'm *really* stressed out, there's nothing better than

Stouffer's and some chocolate ice cream. *lol* But I try not to let

it get that far!

 

Hopefully the rest of your diet is a lot healthier, since you know the

mac'n'cheese really packs it in... and it's awesome you're at the gym

in the mornings.

Handful of pills ( prescriptions and supplements ),

cup of miso soup, coffee. bowl of brown rice.

sometimes leftovers from the nite before and rice.

My breakfast is usually from the blender since I have no morning appetite, plus

it gives me more energy if my body doesn't have to work hard in digestion.

First, I blend some flax seeds,raw pumpkin seeds, raw almonds and maybe raw

walnuts into a powder (they're all organic), then I add any fresh or frozen

organic fruits --- maybe apple, orange, banana and blueberries. Sometimes I add

soy milk, cinnamon and/or ginger root and I'm all set until an early dinner.

I really enjoy breakfast - I like freshly squeezed juice, feta cheese,

olives, tomato and cucumber with pita bread, or Greek yoghurt with

cherry compote, or fruit juice/smoothie, or home-made bread with nut

butter and lemon curd. This is a good reminder to me to get more

creative with my breakfasts as recently I've got stuck in a rut with

the bread and jam option. Thanks Kenia and Paul for starting this

thread off.

On a side note, even though my kids' school has a HUGE ethnic range (over 50

countries represented) some of my 11 year olds classmates don't know what

this stuff IS!!!!! Not to mention sprouts on a sandwich, lettuce for goodness

sake (and I mean REAL lettuce, not iceberg). I seriously scared one of

Sanna's classmates once eating leftover Korean veggies for breakfast!

 

Last night was International Dinner at my 5th grader's elementary school. I

was busy in the ER with my mom, but my DH proudly (ie under duress) took the

helm and took the girls. We bent the rules and figured the English had a green

salad in their diet. I bought 6 heads of Romaine, a huge bag of spinach,

colored peppers, purple onions, we had croutons, all this stuff. DH helped my

DD make a salad & it was gone in about 15 minutes!!! Most of the dishes were

carb heavy and very fatty, they were so glad to see greens it just vanished!

Made DD feel good, but I wish they had taken more!

 

And there are my kids: 'Mom, can we go to Bell's Diner and get some Be Bim

Bob?' And they won't eat it without chopsticks!!! Neither of them will touch a

Happy Meal! (Hallelujah!!!) I love adventurous eaters! One neighbor girl

comes over after school regularly (her dad and I trade favors with regard to

kid

care); 'Do you have any Goldfish?' this kid doesn't eat anyting but Gold

fish, white rice, plain chicken. Someone intervene! Broaden this girl's

horizons!

It just kills me that she won't eat the carrots, celery sticks, even natural

popcorn. We persue the cookbooks all the time looking for good stuff to try.

That is what I love about this group, we have tried so many yummy things!

love Edamame, potstickers with dip and Hallumeh, beg for it. Oh well. Someday

she'll say 'why haven't I ever tried this before?' Believe me, I am no short

order cook. Even DH, if he doesn't like what I've made for dinner, knows

enough to make his own PB & J or cerael. LOL

 

What is weird to me is that this girls mom stands for it, she is way

Just tell her " No there's no goldfish, we have _____. " I'm a meanie. Eat it or

go hungry. I don't cook extra meals. I'd say keep offering this girl stuff &

have her taste it & eventually she'll figure out that it's good stuff. I served

curried sweet potato soup to my 9yo's friend- she looked at me oddly then ate

it! Maybe skip the celery/carrot sticks & offer up something so different &

exotic? She knows she doesn't like the veggies so offer something she doesn't

know she doesn't like? Good luck & don't give up!!

Sometimes while I am driving to work I have one of my homemade granola bars

or maybe a carrot.

 

Then about 9:30 I have some oatmeal made with vanilla soy milk.
