Tuscan Bread Salad with Tomatoes and Fresh Basil 5 1/2-inch thick slices of Italian bread cut into 1/2-inch cubes (3 cups of cubes) 3 cups plum tomatoes, chopped into 1/2-inch pieces (9 tomatoes) 1/4 to 1/3 cup finely chopped onion 1/4 cup chopped fresh basil leaves 3 garlic cloves, finely minced dash salt & pepper 2 tbls. olive oil Preheat oven to 300 degrees. Place bread cubes on an ungreased baking sheet in a single layer. Bake 10 minutes, or until lightly toasted (I usually bake them a little longer). Set aside to cool. In a large bowl, combine tomatoes, onion, basil, garlic, salt and pepper. Toss to mix well. drizzle olive oil and toss again. Add bread cubes half at a time to the tomato mixture, mixing well. Chill for several hours. Stir before serving. The bread cubes will be softer if the salad chills longer and that's fine. This is makes a very good meal on it's own.
