They do sound good. Tell me how they turn out and I;ll make sure the recipe

gets in the file.

Baked Spinach Balls

Ingredients:

 

2 cups sage and onion or herb-seasoned bread stuffing mix

1 small onion, chopped

2 tablespoons grated Parmesan cheese

1 clove garlic, minced

1/4 teaspoon dried thyme leaves

1/4 teaspoon black pepper

1 package (10 ounces) frozen chopped spinach, thawed and well drained

1/4 cup broth

2 egg whites, beaten

Dijon or honey mustard (optional)

 

 

Directions:

 

1. Combine bread stuffing mix, onion, cheese, garlic, thyme and pepper in

medium bowl; mix well. Combine spinach, broth and egg whites in separate medium

bowl; mix well. Stir into bread cube mixture. Cover; refrigerate 1 hour or until

mixture is firm.

 

2. Preheat oven to 350°F. Shape mixture into 24 balls; place on ungreased

baking sheet. Bake 15 minutes or until spinach balls are browned. Serve with

mustard for dipping, if desired. Garnish, if desired.

They were good as a lunch food, or comfort food. Reminded me quite a bit of

the dressing balls my MIL used to make on Thanksgiving. As an appetizer I think

they were missing something, since they weren't very exciting. Not exactly sure

what.....maybe water chestnuts or pecans?

All filed. I put them under greens and then the spinach folder. T=hank you

for the review. I think I'm try then with radish leaves, I'm addicted to those

right now.

dressing balls? interesting; never had stuffing served that way. just roll em

& bake em? Add egg for extra stay togetherness?

here this time of year.
