I hope this isn't a dumb question, but what do I line the pan with? Then it says to gently lift out by foil into the cutting surface. Can anyone explain this to me please? I'm sorry, I don't get it. Susan - line the pan with foil, allowing it to overlap the edges by an inch or two, and make it as flat/smooth as possible inside the pan. Spray the foil. When you make the cookie dough, press it into the lined pan. When you are done baking it, use the overlapped parts of the foil as handles to lift the shortbread out of the pan.
