I used to have a terrible hypoglecemic problem before and it's gone now. We have a fully loaded recipe file and make sure you browse it. All our recipes are tried and true and you will notice, easy to prepare and a huge percentage are made with basic ingredients. Let us know if you have any questions, why don't you tell use how you start your day with breakfast, what you eat and maybe some of us will have tips for you in keeping your sugar level up. This AM I had half of a bagel, some of my soy milk, as well as some fruit (strawberries and watermelon). For lunch I had some leftover veggie lasagna and for dinner I had made a stew that was full of vegetables, brown rice and some tofu. In between lunch and dinner I had made some muffins so I had one of those. I also snacked on some trail mix. I will see my doctor if the hypoglycemia continues. My mom is diabetic so I am keeping an eye on that (part of my reason to change my eating). I will be sure to check out the recipe folder. I'm sure I will just love it. Especially if there are nice easy recipes. I know it seems daunting at first but I think it will be easier as I get used to it. Kind of like when you first move out, have kids etc and have to cook for your new family all over again. I do have a couple of questions: You said that you have been a veggie for 25 yrs. What are common reasons people switch over. : Do most people find the transition difficult? : Have any of you been like me and are just switching their whole family over later on in life and parenting? If so, how did you adjust and how did the family adjust? My son(age 10) has been easiest. He was on soy in his later babyhood, I made his baby food and his snacks were always healthy veggies from the start. So to switch him was fine as he already has a great love of vegetarian eating. My daughter(age 7) was the product of a busy mom who ran a daycare fulltime from the time she was 7 weeks. Yes I took alot of easy ways out and she had lots of crackers and more of a processed diet. She is my finicky eater because of it. My stepson(13 yrs) really loves the change and does not mind at all. My husband is trying but having the most trouble. I need to learn to make " familiar " dishes but substitute non meat choices when necessary.I'll admit that we still have cheese. I don't drink milk and haven't for years but the kids still do. How about some kashi cereal or cream of wheat for breakfast, do you like those? I come from a long line of butchers in the family and they all had cancer. It made me stop to think but not do anything about it. I spent the day in Venice Beach at the same time the Hare Krishna's were having their Festival of the Chariots and they gave me samples of food so I took off my rollerskates and spent the entire day with them. I was handed a cookbook for free and decided to give it a try for one month. I'm strong willed, I did it that very minute and and never looked back. Back then it was no way near as easy to become a vegetarian, now meat alternatives, TVP, cookbooks and products are available, and then there's the groups to join, we help one another a lot in here. I do enjoy it and it may help stabilize blood sugar. I'm collecting recipes of all sorts from the files as we speak. I'm looking forward to hearing others stories also. They do listen alittle to me now. I didn't know what to cook for myself so when I joined this group they helped me alot. I make food from the files. Guest guest Posted April 7, 2006 Report Share Posted April 7, 2006 HI Carmen: Veggie lasagna is always good, most pasta dishes the meat can be left out of. If you want the look of meat you can add some veggie crumbles to the sauce. My daughter and I make things with Morning Star Meal Starters they have a fake chicken and a fake steak.
