I also tried PT's cauliflower recipe posted in the same folder. I will look around for some of my recipes but it might not be today. Cauliflower is so good. i like to eat it in stir-fries, battered with tempura, steamed with butter, and sometimes with a cheese sauce. i'll post my absolute favorite main dish recipe that features cauliflower in a second. Guest guest Posted April 4, 2006 Report Share Posted April 4, 2006 a fave of mine, swiped from the (THANKS, PAT!): CAULIFLOWER WITH CHILIES AND GINGER (VEGAN) This is a favourite here ;=) The degree of ‘heat’ is up to you - the ginger alone might do it for some; others will want those red-hot chillies! 1 or 2 Tbsp cooking oil 1 small head of cauliflower, cut into florets 4 or 5 rounds of ginger root, cut into thin strips 2 or 3 chopped green chilies (optional but good) 2 or 3 garlic cloves, crushed and chopped 2 handfuls of cilantro/coriander leaves, chopped juice of 1 small lime salt and pepper to taste Saute the ginger, garlic and chilies in the oil for a few seconds over medium heat, being careful not to burn the garlic. Add the cauliflower florets (and salt if used), raise the heat to medium-high and stir for a couple of minutes to coat the cauliflower in the spiced oil. Then add around 1/3 cup of water and cover *immediately* to let the cauliflower steam for about three minutes - it should be *just* cooked through, not soft. Remove lid and let any extra water evaporate, then stir in most of the cilantro/coriander leaves (saving a little for garnish) and lime juice and salt and pepper to taste.
