Guest guest Posted April 5, 2006 Report Share Posted April 5, 2006 Another good recipe from " Lean Bean Cuisine " by Jay Solomon Pasta and Red Bean Salad with Pesto For the Pesto ---------------- 4 to 6 garlic cloves. chopped 1/4 cup cashews or pine nuts (both are very good) 1 1/2 cups packed fresh basil leaves 1/2 cup olive oil 1 tsp. black pepper 1 tsp. salt 1/2 cup grated Parmesan or Romano cheese For the Salad ----------------- 1/2 lb. uncooked pasta shells or spirals 10 to 12 yellow or red cherry tomatoes, halved 4 scallions, chopped 1/2 cup shredded carrots 2 cups cooked or canned kidney beans or chick peas,drained To make the pesto, add garlic and nuts to food processor fitted with steel blade. Process for 15 seconds. Add basil, oil and seasonings and process for 15 seconds more, until smooth. Transfer to a bowl and blend in the cheese. Place pasta in boiling water to cover, and cook 9 to 12 minutes, until al dente. Drain and cool under running water. In a large mixing bowl, combine the pesto with pasta, vegetables and beans and blend well. Chill one hour and serve. Serves 4 to 6. *Note - I always add sliced olives when I make this.
