Guest guest
I would like to share this wonderful discovery. Socca is a chickpea pancake originating from Nice. There are a few recipes at http://www.traveltastes.com/garbanzo.htm and many other websites, but I make mine with 1 cup chickpea flour, one cup of water, half a teaspoon of salt, and two tablespoons of olive oil, whisked together and baked in an oven-safe nonstick skillet at 475 for 10-15 minutes. My 16-month-old picky daughter actually likes them, which makes me happy because she's been rejecting legumes for a while. I also replace some wheat flour with chickpea flour in pancakes, muffins and other bready things. I get it in bulk at Whole Foods--it's actually quite cheap. Barbara P.S. If anyone knows how to pronounce " socca " , please let me know!
