muffin recipes & an introduction

Carol and Heather - please post your blueberry and whole-wheat muffin and

pumpkin cookie recipes!! I just love muffins because they are so versatile.

Somewhere I saw mention of meat/nut loaf cooked in muffin tins - wouldn't

that be good with the potato topping and easy for lunches!

 

Welcome Heather and congrats on your pgcy! I have two daughters, one will be

4 in April and one will be 3 in May, and a son who will be 1 in May.

The chocolate chips work for my kids, too. One thing I've found that I

love is whole wheat pastry flour. It's softer than regular whole wheat

flour, and I use it in everything -- it doesn't have to be mixed with

white flour to work in baked goods. Most of the cookies we make are 100%

whole wheat these days. My kids have always only had whole grains so

that's normal to them, but I find when we have company they often rave

about the yummy baked goods and I don't know whether or not I should

tell them it was all whole wheat!

 

We eat a lot of muffins, and my kids' favourite recipe is a whole-wheat

bran one that is really soft and flavourful. I often add raspberries and

chocolate chips to them. I use blackstrap molasses, and they are so dark

brown they look like they might just be chocolate muffins. I can send

the recipe if anyone's interested. I also make snacks like pumpkin

cookies -- these and mini muffins are great snacks to send to school

with my oldest son.

 

An introduction, since this is my first post to this list -- my name is

Heather, and I live in Ontario, Canada. I have been vegetarian for 14

years. My husband is mostly vegetarian (will occasionally order fish at

a restaurant) and our two sons, ages 4 and 2, are vegetarian. We are

expecting another son in May. We do a lot of baking at our house and

always modify recipes we use to up the health quotient.

Hello Heather!-- I'm Heather too!

I'm also fairly new to this list and unfortunately I've only had

time to read the posts these days. But I have to admit my " ears "

(eyes?) perked up at the mention of all these muffin recipes! Please

post yours and the cookies too if you can, they sound sooo good! My

children (especially carb-addicted ds, hee hee) love muffins. For my

daughter right now (14 yrs) they are handy for gaining a bit of weight

- a good non-bulky snack.

Thank you for the tips about blackstrap molasses and wwpastry

flour. We can't get the flour, as we live in Newfoundland and the

natural food selection is somewhat limited. I envy you living in

Ontario- haven't checked out the health food stores there (I'm

originally from Quebec) but I bet there are lots of 'em!

I have a recipe for very hearty, tasty muffins if anyone's

interested. They use reg. wholewheat flour, plenty of flax and bran,

oats, raisens and minimal sugar. The kids gobble them up.

Hi Heather -- I get whole wheat pastry flour at Bulk Barn. I just

checked their website and they have three locations in Newfoundland: in

Corner Brook, Mount Pearl and St. John's. I don't know if they carry the

same selection across the country, but if you're near one it's worth

checking! Please post your muffin recipe too.
