Advice on switching over fav. bean soup recipe

My family LOVES 16 bean soup. I make it in the crock pot and serve

with rice. Super Easy!

 

The package comes with a ham favor packet and I always added sausage.

 

What do you guys suggest to replace the favor packet?

What would work to replace the link sausage?

 

Although, Nick (my dh) and my kids would still eat it without meat. I

would like to try something out.

Here's a little trick I learned from Deborah Madison, " Vegetarian Cooking for

Everyone " (great cookbook, BTW). I think it's in her lentil soup recipe. Near

the end of cooking, add an equal amount (1 or 2 teaspoons, depending on the size

of your recipe) of balsalmic vinegar and dijon mustard. Alter to taste. It

adds a fuller mouth-feel....hard to explain, but it really helps round out the

taste of soups that are customarily made with meat in them.

I dont have any advise about the packet, but there are some really

yummy varieties of soy sausage. You might be able to find them at a

regular grocery store, definately at a natural food store.

It's not hard to find " bacon bits " made of soy with artificial flavor from

yeast extract. I've seen the powdered ham flavor at health food stores.

Morningstar Strips have a strong bacony flavor. You can use yeast extract

[Vegemite, Sovex, Vegex] and liquid smoke to get the flavor. Not long ago

there was a discussion about frying up slices of tofu that had been

marinated in such a mix, plus maple syrup, to make your own bacon

substitute.
