Pritikin-style Fruit Loaf

 

Chef: Gabriel Gate

 

This moist, fruity cake is made with no fat or no added sugar.

 

Serves - makes about 12 slices.

 

You need:

25 dried apricots

10 dried figs

10 dried prunes

5 dried pears, halved

2 cups water

1 large or 2 small bananas

1 cup wholemeal self-raising flour

1/2 cup almond meal

1/4 tsp cinnamon powder

1 tsp finely grated orange rind

 

Method:

Place dried fruits in saucepan with water. Bring to the boil, cover and

simmer for 5 minutes. Remove ten apricots from the pan and blend to a

puree with the cooking liquid and the banana. Place in a large mixing bowl.

 

Preheat oven to 180 degrees.

 

Mix flour and almond meal with the fruit puree and stir in all fruits,

cinnamon and orange rind. Spoon the preparation into a greased 20cm long

loaf tin and bake in the preheated oven for about 40 minutes. Allow to

cool before unmoulding onto a rack.
