BTW, I was looking at your byline and wanted to tell you that you are so blessed to be able to stay home with your children. I am also. I feel like the luckiest person alive because we have this time together. They grow up so fast. They are the spice of life. Guest guest Posted May 23, 2006 Report Share Posted May 23, 2006 In the aftermath of Katrina when we were without power, I borrowed a propane cooker and started cooking outside. At first we made huge pots of soup from thawing veggies out of the freezer; we shared with neighbors. We cooked all the frozen Griller-like patties we had; breakfast was whole wheat pancakes. I liked cooking outside well enough to get my own propane cooker. Now we cook all kinds of meals on cast iron skillets and fajita pans. Today's lunch was fresh fried green tomatoes with skillet gravy; totally vegan and totally white trash southern cooking. I've made banana fajitas lightly sauteed in butter flavored oil with granola and caramel sauce. Yesterday we made veggie curry. Often we cook some kind of veggie burger patties, either from the store or home made. Sometimes veggie weenies. We've made peach cobbler in a cast iron dutch oven baked in coals, with hot coals on top of the lid. I also have a large iron wok for stir frying veggies and marinated tofu. What about using a grill basket -- like the baskets people use for grilling some kinds of fish?
