I have used a tip I found here to bake a batch of cupcakes and freeze them, using them one at a time for parties. Now I need a recipe for a very small amount of icing. I don't want to frost more than one or two at a time. I need help for the traditional Earth Balance buttercream/Spectrum shortening recipe but would like other recipes and suggestions if anyone has them. I never used a recipe just put a little bit of margarine in a small bowl, added in some icing sugar (powdered sugar) and then added a few drops of soymilk. If it is too wet add more icing sugar, if it is too dry add a few more drops of soymilk. It made enough for more than 8 cupcakes! I don't think I'll have any problems " winging it " next time. I certainly don't think I'll end up with as much.
