Guest guest
I tried the recipe for cereal bars mentioned earlier today. I make my own granola, and this recipe was similar. We used peanut butter and cashew butter, lots and lots of raisins, blackstrap molasses and cheerios along with the oats. I didn't get the wet/dry balance right so I ended up with some super chunky granola instead of bars. But man oh man was it delicious. The nut butters, molasses and raisins all blended flavors so none overpowered. My two-year-old loved it. And my husband. We had salads, that chunky granola and watermelon for dinner. Oh- and roasted cauliflower. Did anybody else try this recipe from the Surreal Gourmet that appeared in Life Magazine probably last summer: Popcorn cauliflower Preheat oven to 425. Break cauliflower into golf ball sized hunks. Toss in bowl with olive oil and salt (I used a pastry brush instead of tossing, I also go light on the salt) Spread on cookie sheet so the pieces are far enough apart so they won't steam. Cook for an hour, turning every fifteen minutes. They will get dark brown in parts. They should be crunchy when done. It's a family favorite here. We also tried Dick Ford's banana fajitas today. That was good, too. I threw some of the granola/breakfast bars in instead of oats or granola. I threw in finely diced walnuts for the nuts as I didn't want my two-year-old to choke. This would be a great belgian waffle topping, Dick. Thanks for sharing. AA
