I'm feeding a family that includes 1,4 & 5 year olds in addition to hubby and I who are, fortunately, in complete agreement to this wonderful and healthful lifestyle change for our family. Any tips or product info would be greatly appreciated. I'm not finding egg subs and Seitan or TVP, etc. Where to go and what to buy! I haven't bought eggs in months but it didn't stop my baking! I've found that if I use around twice or more of what they recommend on the package, things work out well. What I'm saying is that adding more doesn't seem to hurt the end product, and could improve it. There are some recipes, though, that don't include eggs or egg replacer. " The New Farm Vegetarian Cookbook " has recipes for quick breads, cookies, and cakes and I don't think any include egg replacer. I make the banana recipe all the time. You can sub pumpkin for bananas and that's delish as well. As far as seitan, if you don't have a hfs nearby you can order the mix: " Quick Seitan " I think it's called, by mail order. Also, the NFVC (above) has several recipes for using seitan. I love the " Oven Fried Gluten " . I skip the breading part. Anyway, I really recommend that you purchase this cookbook. It is a great starting point for vegan cooking. Lots of kid-friendly recipes. Good luck! Guest guest Posted August 9, 2006 Report Share Posted August 9, 2006 when we first went vegan, 16 months ago, we bought a box of egg replacer, because my husband is a baked goods freak and we were sure he'd need it. but we actually haven't used even half the box and we haven't used it at all in months. egg replacer is pretty much only for baked goods and we've found that it is far more temperamental than other non-branded egg replacers, like flax meal or applesauce. now when we make waffles, muffins, banana bread, etc., we just use applesauce, banana or flax meal and we almost never use the actual " egg replacer. " so experiment a lot. you can purchase the quick setian and it works up very quickly indeed. but you can also make seitan yourself from plain old flour. http://www.fatfree.com/archive/1997/sep/msg00252.html for many other vegan substitutes and products (including the aforementioned quick seitan and egg replacer) i highly recommend the farm's healthy eating catalog (www.healthy-eating.com). it's also great for books (they have sales constantly) and bulk orders for food storage. i order something from them every few months and they are always awesome. chandelle' Quote Link to comment Share on other sites More sharing options...

The Post Punk Kitchen (http://www.theppk.com/) has a really great guide on vegan baking ( http://www.theppk.com/veganbaking.html ) and when you'll want to use which solution. (It's also in her cookbook, Vegan with a Vengeance.) And in the fall, she's coming out with Vegan Cupcakes Take Over the World, which I can't wait for. (If you go to the ppk blog and go back a ways, you can see some pictures of those cupcakes. Droooool...) There's also a seitan recipe, which is so much better than buying storebought (and really easy, I promise), but for some reason the one on the website is wrong.
