Anyway, my daughter is also a vegetarian trending towards vegan. Of course her school lunches (8th grade) do NOT allow for this, so she packs. Any suggestions for vegan lunches that can be packed? So far she has had either tuna, peanut butter and Morning Star veggie chicken nuggets on a salad every day. It is going to be a very long year for her if I cannot come up with additional things for her to eat. Any help would be very appreciated. Thank you so much. We are packing soups or beans to keep warm inside the thermos. Other main dishes we are doing are veggie dogs baked in dough (veggie pigs in the blanket), vegan deli slices (balogna, ham) on wonderbread or bagel, or I will cut up into little cubes and give her crackers to eat with them, hummus in pita bread (with pickles and/or shredded veggies). Sides we do fruit (bananas, grapes, etc) and veggies (carrots or broccoli) with hummus in a separate container to dip. And then I let her pick a snack to have (oreos, teddy grahams, fruit snacks or something like that). I got my friends to save small containers from restaurants for us to use to store the small fruits and veggies - It works perfectly. Whole wheat tortillas are a great base for lots of wraps, like nut butters and jellies; faux deli meat and rice cheese; hommous and shredded veggies; leftovers. Inspired by the evil lunchables, I pack " make your own " nachos (chips, beans, shredded cheese, guacamole) and pizza (a slice of whole grain bread cut into quarters, sauce, cheese, sliced mushrooms).
