Guest guest Posted September 28, 2006 Report Share Posted September 28, 2006 ok, so i feel like i've tried every vegan chocolate chip cookie recipe on the planet and although i'm a pretty good cook overall, my cookies always come out flat, not fluffy, and they don't taste great. anyone have a " foolproof " vegan chocolate chip cookie recipe? one that doesn't involve flax meal 'cause i don't have a grinder or the patience to deal with doing it in the blender. it would be much appreciated! chandelle' in utah -- " When I attended home births I carried no pain medications; I told the women they would have to go to the hospital if they needed such.... I have a recipe for cookie dough, but I've never tried actually baking it. It came from a recipe for a chocolate chip cookie dough cheesecake. I just make the dough to eat. You could try it, here it is: 1/4 c. margarine 1/4 c. sugar 1/4 c. packed brown sugar 1 tbsp. vanilla (I use more, about 1 1/4 tbsp. 1/2 c. flour 1 c. chocolate chips Also, you could try putting a little baking powder in the dough. My Nannie says it helps things rise. Works for my cornbread, anyway. Guest guest Posted September 29, 2006 Report Share Posted September 29, 2006 I use ener-g egg replacer in this cookie recipe and dagoba or tropicsource chips ; The Ultimate Chocolate Chip Cookie 11 1/2 ounce(s) 60% Cacao Bittersweet Chocolate Chips 2 1/4 cup(s) unsifted flour ( I use whole wheat ) 1 teaspoon(s) baking soda 1/2 teaspoon(s) teaspoon salt 1 cup earth balance margerine 3/4 cup(s) sugar ( I use Florida crystals or beet sugar ) 3/4 cup(s) packed brown sugar or date sugar egg replacer for 2 eggs 2 teaspoon(s) vanilla 1 cup(s) chopped walnuts or pecans (optional) Directions Preheat oven to 375ºF. Stir flour with baking soda and salt; set aside. In large mixer bowl, cream butter with sugar, brown sugar, eggs, and vanilla. Gradually blend dry mixture into creamed mixture. Stir in nuts and chocolate chips. Drop 1 tablespoon of dough per cookie onto ungreased cookie sheets. Preheat the oven to 350°F. 2. Cream butter and sugars until light and fluffy. Slowly add Silk, cream well, then add vanilla. Combine the dry ingredients in a mixing bowl. Add the dry ingredients to the creamed mixture, then fold in the chocolate chips. 3. Drop by teaspoons on parchment lined cookie sheets. Bake at 350°F degrees for 8-10 minutes. The only requirements are you use substitutions: egg replacer, smart balance or earth balance margarine and vegan chocolate chips, turbinado sugar to replace all sugars. I also bake them on parchment paper. Guest guest Posted September 29, 2006 Report Share Posted September 29, 2006 I've found that using Earth Balance stick margarine (it's non-hydrogenated), I can make a pretty good chocolate chip cookie. The tub margarines have a higher water content and so don't hold up as well. With this, I've used the recipe from Nestle Tollhouse (but not their chips!) for chocolate chip cookies substituting vegan ingredients (using Ener-G egg replacer for the eggs).
