Guest guest Posted December 31, 2006 Report Share Posted December 31, 2006 Sure. It's pretty easy. Garlic " butter " 5-6 Tbsp Earth Balance (or any other you like. The recipe actually calls for 8, but I cut it down with no change to taste) 3 garlic cloves, chopped (I usually run it through the garlic press. I like about half a clove of Elephant garlic, as it's not so strong, so my 3yr old will eat more stuff when I cook with this than regular garlic) 1Tbsp chopped parsley (I've changed herbs around, tarragon and dill together are pretty good) Bean Patties One can of kidney beans 1 1/4 cup of breadcrumbs (I usually use matzo meal instead as it's vegan) 2Tbsp Earth Balance (I actually forgot this part last time, and it can be left out, though it's a bit drier) 1 leek, chopped (or a small onion/half a med. onion or however much you like) 1 stalk celery, chopped Salt and pepper to taste To make garlic 'butter': In a bowl, put garlic, E.B. and herbs. Blend with a wooden spoon (it's fairly easy). Place on parchment/wax paper or clear plastic wrap, and roll into tube shape. Put in fridge or freezer to chill a bit (you want it to firm up, but not be a solid hunk of a brick). For Bean patties: Using potato masher, mash beans and stir in about 3/4c of the breadcrumbs until thoroughly blended Melt EB or use cooking spray to saute the leek and celery for 3-4 min's (basically untill onions are clear) Add bean mix to the pan, add spices (parsley, salt and pepper to taste and mix well. (I usually skip the putting it in the pan and just add the onions/celery to the bean mix) Shape bean mix into oval shapes (one can yeilds about 4 servings, 2 cans yeilds 8) Take garlic 'butter' out and slice into 4 (I've actually used the same amount of it for 8 bean patties, so you can really adjust that part for your own fat/oil intake) make a well in the bean patty, and mould the bean mix around the garlic butter to encase it completely. Dip each patty into the rest of the breadcrumbs You can either pan fry to make them golden brown, turningonce for about 7-10 min's or until golden brown. I've baked them in the oven, turning once, I think it was around 350 for about 45min's to an hour (total time) till both sides were brown. I serve with a salad, a green vegie, and my son's choice of one other (McCain makes " Smiley Fries " that are vegan, and we get those on occasion, and he loves them). You can do mashed potatoes and a simple gravy (I usually thicken some Better Than Boullion Vegetable Broth and use that, it's really super tasty, they make a vegetarian 'chicken' one and I think a vegi 'beef' one, but I never see them in stores, but my co-op has them, but I don't ever want a case. LOL). It's very yummy. It sounds a lot more complex than it actually is. My 3 yr old likes to help mash (he's now always asking to help me cook, too). We will try it...modified for my boys : ) Hopefully I can make it work for them...I love chili, but chili twice a week is getting old Thanks!
