Thanks for the food ideas Kadee. I've tried quinoa once, but we did not like

it. I'll have to try it again. I like the idea of adding rice to the beans for

something different....we'll try that.

 

I would love the recipe to your pot pie...maybe I could make some kind of cream

sauce depending on the food day we are on..maybe a starch and a nut milk.

filling meal. You could also try soft tacos with the beans, some type of

seasoned crumbles, lettuce, and tomatoes. Those are good. I made a pot pie

yesterday that doesn't have any of the things you said your son has problems

with (except I'm not sure if cream of mushroom soup has onions, but I'm sure

there would be a suitable replacement) . Let me know if you'd like the recipe.

It was waaaay too good.

Is it possible that you didn't like quinoa because you

didn't soak it first? It has a bitter taste then.

When soaked, it has a pleasant nutty taste.

 

I've heard everything from 15 minutes to overnight,

but I think the longer time is for when you want to

sprout the quinoa.

Here's the pot pie recipe, you can sub whatever and I'm sure it'll still be

good.

 

crust (double this if you also want crust on the bottom, I like it better that

way):

 

1 c. flour

1 tsp. salt

4 tbsp. butter

1/4 c. shortening

3 tbsp. ice water

 

Mix all but the water with a fork until shortening is the size of small peas.

Add ice water and mix to pastry consistency. Refrigerate while you mix the

filling.

 

filling:

 

1 can cream of mushroom soup

1 can vegetable broth

1 small potato, cut into 1/2 " cubes

1 carrot, sliced

1 large mushroom, sliced

1 small can corn

1 small can peas

about 1/4 tsp. each: sage, thyme, & oregano

 

Mix all these things together (you can use more or less broth to make the sauce

the consistency you want). Cover the bottom of two loaf pans with crust (if you

doubled the crust). Pour in the filling, and top with the rest of the crust.

Bake at 400 degrees for about an hour. Very good. :)

I've been told that rinsing a whole lot, not soaking is what you need to do.

I've bought a box, so I will check this out soon.

That's what I do, I just put it in a very fine strainer and rinse it really

well. I haven't tried soaking it.

We experiment with different pot pies all the time! I don't think

I've made the same one twice.

I did not soak it, but I rinsed it. Maybe I'll have to try soaking it instead

and see if is any better. We have quinoa night on Friday (my son is on a

rotation diet) so maybe we will try it then : )
