Hello my name is Yolanda we have to boys 2.5 and my oldest will be 4

on Jan 31. We are leaning towards becoming vegeterians. We don't eat

beef, pork, or diary products but ocassionaly we have orgainc chicken

breast maybe once every 2 weeks. I still give my kids eggs. What do

you give your kids in place of eggs?

what are some wholesome things to have for a childs birthday party?

I don't know what to do about the birthday cake.

Thanks,

Yolanda

what do you mean by " in place of eggs " ? if you're talking about baking,

there are tons of things you can use in place of eggs - there's commercial

egg replacer, but also banana, applesauce, flaxseed + water, etc. if you're

talking about nutrition, there is pretty much nothing in eggs that you can't

get from other sources, and they are pretty harmful to the body, so

basically if you get rid of them you'll only have benefits! if you're

talking about breakfast, well, there are tons of breakfast recipes that

don't include eggs. we go all out on breakfast on the weekends, so for

example, today we had whole-wheat blueberry waffles with maple syrup and

faux benedict on whole-wheat english muffins with veggie ham, a nutritional

yeast sauce in place of cheese, and sauteed tofu marinated in apple cider

vinegar in place of eggs. it was so-o-o-o-o yummy. :)

I have to admit I don't actually bake. I did take a vegan baking class about 1

1/2 years or so ago and experimented for a little while with it. And I

occasionally bake brownies when the mood hits me. I use EnerG Egg replacer. We

eat lots of breakfast foods like hemp or flaxseed waffles that are vegan, cereal

with soymilk (I also like almond breeze a lot if one was trying to avoid soy),

veggie sausages and bacons, bagels with veggie cream cheese or jam or just

plain, and fruit etc. My daughter likes it when I slice strawberries up and

line them around her waffles like a flower. I have a friend who has served me

up some really great tofu scramble which is like a vegan omlette on a couple of

occasions. But yet I still don't feel the need to try and replicate that at my

table. We don't need to plop something on our plates where eggs ought to go

theres lot of other really great foods out there.

As far as the birthday cake goes I bet if you have a nice bakery (not like the

kind in a grocery store but a shop that is just a bakery) they will whip you up

a vegan cake for his birthday. I bet whole foods might too.

My son likes to have just plain tofu - basically right out of the package.

LOL. He's only recently told us that he likes 'warm tofu' which is basically

any kind that we have made (tofu scramble, baked tofu nuggets, pan sered

tofu etc). I also make a lot of different flavored seitan (wheat gluten).

It's fairly easy, and there are tons of recipes. I found one that works for

me, and use it most of the time. I finally made one in my crockpot for

dinner yesterday and it was amazing. We also do a lot of beans/legumes too.

Most favorite beans in our house - vegetarian baked beans, kidney beans,

garbanzos (plain or in falafel), I posted a recipe not long ago for kidney

bean kiev I think on this list, it's a nice change from 'beans and a

grain/rice' type of a dish.

There is also the Magic Loaf Studio for making something akin to a

'meat'loaf using some kind of bean/legume and you just check off what other

stuff you have and it spits out a recipe for you. All the ones we've tried

from it have been very very yummy.

http://www.veganlunchbox.com/loaf_studio.html

(the main site is also very nice for lunch ideas)

There are different kinds of egg replacers for baking, and you can use

dairy free replacers for butter (Earth Balance, Smart Balance, Soy Garden,

as well as Crisco since it's all vegetable shortening).

As for cakes, depending on whre you live, there may be a special bakery you

can go to - in Chicago proper there are at least 2, if not more vegan

bakeries. I've seen several in other places as well, but I'd think an actual

bakery as someone else mentioned should be able to do a custom job for you.

:)

If you do any baking at all, there is the Vegan Cupcakes Take Over The World

- I've only heard raves about it (and also no cutting since they're already

portioned out). You can also get the Cherrystone cake mix which is

egg/dairy/etc free. I did this for my son last year. We made them, using

crushed pineapple for most of the liquid. They were amazing. We found some

off the shelf (and very un-healthy) frosing, but it wasn't a lot on the

cupcakes. We made them into a caterpillar using other vegan candies. I have

also found a lovely pumpkin bread recipe, which we baked into loaves and

decorated them like a train engine and a few train cars (filled with

pretzle logs and other stuff for the cargo). I think it was on

allrecipes.com - I don't know if it is egg free, but I haven't made it since

we stopped using eggs in our house. I think many banana breads or other

quick breads are made without egg (or can be found online without)

There is also 'ice cream' - If you have a whole foods (also if you don't

bake, I have seen many vegan cakes there, beautiful and delicious, I don't

know if they do custom stuff, but you could ask, wouldn't hurt) they have

all different kinds of ice cream replacers - rice dream, Soy Delicious and

(by far the most amazing) Temptation (I know they're Chicago local, but they

are in many other Whole Foods, and I htnk starting to get into other stores,

too. Also, it's soy if you are concerned about that. We usually have to go

with the Rice Dream stuff as both mine and my husbands mom can't have soy

for medical reasons.

hope this helps!

I've served brownies at my daughter's birthday parties and they are

always a big hit. (My daughter happens to hate cake frosting--like

me.)If you aren't that into baking, here's a SUPER easy brownie recipe

that came in the McDougall newsletter a couple weeks ago

<http://www.drmcdougall.com/>

- 1 box Dr. Oetker Organic Chocolate CAKE Mix (not the brownie mix)

- 1 15-ounce can pure pumpkin

- 1 cup dairy-free chocolate chips

Preheat oven to 325 degrees.

Pour the mix into a bowl, stir in the pumpkin and chocolate until very

well combined.

Pour into a 9 X 13 non-stick baking dish and bake until done, about 25

minutes (insert a toothpick into the center, if it comes out clean it is

done).

When I serve these brownies to people I wait until after they've tasted

them (and gone back for seconds) to tell them about the pumpkin. You

really can't taste it underneath the chocolate!

Cheers,

Kathy

For the past 2 years, we have served Haystacks at my children's parties which

has become a big hit among the guests!

The Haystacks are simple to make. We let the children design their own

haystacks, beginning with a layer of chips topped with warm pinto or kidney

beans and lettuce, and then adding, in any order, tomatoes, onions, cucumbers,

avocado, olives, salsa, and ending with a pimiento cheese sauce that is made out

of pimientoes or roasted red peppers and cashews. Yum, yum, yum!
