poor-man's vegan cookbook suggestion

Hi everyone,

 

Does anyone know of a good vegan " poor-man's " cookbook? I am looking

for something for my sister. She's a poor college student but has a

studio apartment so she can cook what she wants. She loves the gourmet

vegan cooking but some of the ingredients are just too expensive and

take more time than she typically has. She's very healthy but is

getting sick of pasta, rice, beans and of course veggies. Any

suggestions would be great.

Oh my gosh....internet would be the best place...find some recipes and store it

in a folder....there is a wealth of information in here.

She should join and check the archives of one of the active vegetarian

groups. Tons of recipes, easy to swap ingredients.

Students Go Vegan cook book by Carole Ramyond. I have the vegetarian one (mainly

because I didn't know there was a vegan one until recently, and I don't have $$

yet to buy it and I LOVE it 0 The recipes are quick, cheap, easy, and tailored

for single people (but easily doubled or tripled for more). I have yet to find a

recipe I don't like. I am about to buy the vegan one soonl
