substitute for coconut milk?

I live in vegan/vegetarian wasteland (haha) and cannot find coconut milk, and

all the substitutions for it I know have real milk in them. Any suggestions? It

is for frosting if that makes a difference. I am technically ovo-lacto, but I

like to go vegan when I can. So if there isn't anything suitable, I could use

condensed milk, but like I said, I prefer not to.

Have you looked in the Mexican section of your grocery store? That is where I

find it.

Maybe reduce some almond milk, or other nut milks or soy or rice milk II

think there was a post earlier on here about making your own, as I'm sure

nuts and oats are readily available even if soy/rice/almond/etc milks are

not. :)

 

Basically, to reduce let it simmer on the stove top, and it should reduce by

about half . It will be thicker like coconut milk is (If I recall correctly,

it's been a while since I cooked with it). :) Make sure to stir, probably

often till it reaches a similar consistancy.

 

If it were me, and I was out, I would probalby sub. one of the non-dairy

milks instead, but using a bit less so it wouldn't water it down too much,

or maybe (since you said it was frosting) some of the Silk Coffee Creamer

but adjust to taste for the sweetner in the Silk creamer.

Coconut milk is very thin, Cream of Coconut is a whole different product and

very thick and sweet, much like sweetened condensed milk.

Hrm. the last stuff I had was coconut milk, not cream of coconut. It was a

bit thicker than water/soymilk from what I recall. Though now that I think

about it, would the 'Light' coconut milk be thicker for some reason? I know

that was the last one I picked up. It wasn't sweet though. Maybe a different

brand? I'm confused now. :)

 

Oops, I meant about adjusting the sweetness in regard to using the Silk

stuff, not the coconut milk. :) I didn't mean to confuse anyone. Sorry.

thank you everyone who gave me coconut milk advice. The Mexican aisle is the one

place I didn't think to look, so I will look there. They have a Mexican store

just across the street, so I will check it out first thing in the morning. If

they don't have it, then i will use a substitution. Thank you thank you! :)

I would try almond milk.

I rrecently bought a half dozen cans of coconut milk from Big Lots of

all places !!! If you cant find any a good sub is to add 2 T. (30

ml) of grated coconut, dry or frozen)shredded coconut to plain silk (

or rice milk or other dairy free milk ) and soak it for several hours

in the refrigerator .When ready to use simply strain the coconut out

of the liquid

or

You can make coconut milk by combining the meat from one fresh

coconut, cut into chunks, with 3 c. (750 ml) hot but not quite boiling

water in a blender. Blend two to three minutes. Let stand for twenty

minutes. Strain in a cloth, squeezing all the liquid from the coconut.

Use immediately or keep in the refrigerator for up to four days. If

you do not have a blender, you can grate the coconut by hand and pour

the boiling water over it.

Look for a can -- not the Tetra packs you might be expecting. It does

not look at all like soy milk or rice milk or almond. Ours comes in a

red can with a rooster on it.

 

Even living as we do, in the sub-arctic in a town that is not exactly

full of health nuts (!) this is easy to obtain -- in every grocery store

and even in the smaller general store and some corner stores.

I don't remember where I read this, and don't have the

time today to look it up, but it might be worth doing

a Google search....

 

I seem to recall that there's a way to boil shredded

unsweetened coconut in a liquid to make erzatz coconut

milk.

Yeah, I went back and found it in the Asian section of the supermarket. I wasn't

expecting it there! I looked in the canned fruit section, baking section (where

I could have sworn I had seen it before, but I guess I was imagining things),

and even the juice section. Other cultural sections didn't even cross my mind

until I asked. So I definitely appreciate all the answers! :)

 

I can identify being one of the few in town who are trying to live healthily.

(Is that a word?) I live in a Tyson town, so woe to those who dare to be

vegetarian! Even after telling them I don't eat meat (definitely don't want to

use the word " vegetarian " ) people still try to give me chicken. I actually heard

a sermon a week or two after moving here about the absurdity of those who care

about the environment because it was all going to burn up anyways. Argh. There

are a couple of health food stores half an hour away from me, and I am living

off of those and the internet. :)
