freezing seitan

i'm not a big fan of most meat substitutes because they're so

processed...but i love seitan because it makes a lot of mexican foods taste

totally authentic. i'm sick of spending so much money on the pre-made crap

so i embarked on making my own from VWG and it turned out awesome! but it

made a ton and i don't think it will all get used in five days. can i

freeze it? do i just freeze the seitan itself or should i freeze it with

broth? any tips?

I freeze mine when I make a double batch (sometimes spiced differently in

the second)

I didn't freeze in the broth, just wrapped it well in waxed paper (maybe it

was plastic wrap) and then foil and then in a freezer bag. Probably overkill

on it, unless you are not going to use it for a long while. I think it was

pretty waterlogged with the broth though. I make sure to keep it that way.

 

We didn't notice any problems with the texture changing (there was none).

Flavor was fine too.

I made seitan and I froze it without the liquid. It came out fine when I

defrosted it. I don't think it matters, but it seems less messy to freeze it

without the broth.

Haha, I'm thinking of hell freezing over jokes. I don't know if you can freeze

it, I just wonder why they named it seitan! Another vegetarian and I on a rat

group were being told pretty much that vegetarians are arrogant and evil, so we

had a private conversation and she said we were " seitan worshippers. " :)

Another name for it is gluten or wheat meat. I use the name of gluten. I never

use the name of seitan because of the way it sounds. It is all the same

product.

I often pronounce it " seetan.' It just sounds a bit better than seitan or

gluten. My mom and grandmother always made gluten but got out of the habit

awhile ago. I'm not really sure why. I'd like to start making it but haven't

really had much luck yet (they didn't get too creative with the spices but it

was still great, especially on the bbq). Anyway, I bought the Simply Heavenly

cookbook and tried the recipes in there. The oven fried gluten was awesome (even

omni husband loved it) but my sucess with the rest has been poor.

 

Has anyone use this cookbook? It's hard to find (I got mine on eBay after

reading some reviews on lin). Or, can anyone share their gluten tips with me? I

prefer to use the gluten flour rather do it from scratch (busy mom with two kids

and new job!) but would be willing to try anything.
