any favorite pesach (passover) recipes?

It's that time of year again. For those unfamiliar, no legumes, leavening

agents, rice etc. For a family that exists on beans, rice and quesadillas, it

is always a week of challenge.

I've been researching many new recipes lately and have come across a few

Vegetarian

Pesach Recipes.

I know that Isa Chandra Moskowitz's book Vegan With a Vengeance lists a few that

she

uses, or at least, I'm pretty sure it does, but I can't find my copy at the

moment.

 

However, in my Vegetarian Cooking for Dummies, the author mentions Passover

specifically, saying that many traditional Passover recipes can be converted to

vegan just

by replacing the eggs, butter and/or milk.

I don't know if I need to list ingredients that can sub for eggs, butter or

milk, but if anyone

would like to know, I'll list them here.

 

I won't pretend that any of these recipes are my own, so I'll just include the

link I found to

some wonderful Pesach recipes, many of which are vegetarian and vegan.

The Vegetarian Resource Group publishes 2 Passover cookbooks. Both are vegan -

No Cholesterol Passover Recipes and Vegan Passover Recipes. They can be ordered

on our website - http://www.vrg.org/catalog/. I've used these books for years

and have given them as gifts to non-veg family members who want ideas for dishes

without eggs.

I have two of the books that Reed Mangels suggested and they are

really good! I make a passover lasagna using sauteed (onions, chard

stems, tomatoes, green onions, basil, oregano) and raw veggies

(chard, zucchini, mushrooms) and matzo and I cover it with a nut

" cheese " made with cashews (recipe is in the book: " No Cholesterol

Passover Recipes " . It's delish!

 

I usually make latkes and matzo ball soup for seder and we eat those

left-overs for awhile with apple sauce.

Thank you to everyone for your suggestions. I recently learned that quinoa is

an allowable food for Pesach, so I think this will be a good protein for us. I

avoid nuts, they are a major migraine trigger for me (and I LOVE cashews).

Perhaps you can use a tomato based sauce instead and add nutritional

yeast to make it creamy. Or just sub nutri yeast

for the cashews in the nut cheese recipe?
