Guest guest Posted May 16, 2007 Report Share Posted May 16, 2007 We cut carrots and parsnips together into matchsticks and then either saute or broil (using butter or olive oil) until the natural sugars caramelize: dark brown/black on the outside edges, amazingly sweet inside. We used parsnips, carrots, beets & potatoes and boy were they sweet & yummy! I boiled some sweet potatoes and parsnips (about 1/4 lb of each) and put them in a casserole dish. Then I got a fine chopped onion and fried it off in olive oil with some fine chopped mushrooms (about 2 or 3 ounces) for a couple of minutes, then threw in a tablespoon of tomato paste and 1.5 tblsp of flour. Stirred it all in and poured in 1/4 of a pint of soya milk, and simmered till it thickened, then added a can of green lentils and 1tsp dried herbs and cooked till heated through. Poured it all over the sweet potatoes and parsnips and baked in the oven on 200 degrees C for 20 mins, then ate it with mashed potatoes and kale. I adapted it from a recipe in a vegan cookbook I have at home, except in that they just use regular potatoes instead of the sweet potatoes and parsnips, and it can be quite bland.
